DH wants me to make chicken soup...no problem, right? But...

he bought a whole roaster chicken. Ummm, what do I do with it? Chat Icon

I would roast it and then use that meat in the soup and for sandwiches. I make mine with low sodium chx broth and some low sodium chx stock. I sautee fresh garlic, onions, and carrots in about 2T of Olive Oil then add stock/broth and simmer for about 35 min. Then I add the chx that is already cooked and after another 30min I add the noodles. HTH

i cut the chicken up and brown it in olive oil in the bottom of the box then i take it out and saute onions and garlic the add carrots and celery and saute that a lil then i add the chicken back in with escarole salt & pepper then I fill the pot with broth to cover everything and bring to a boil.. once it boils i drop it down to a simmer for about 45 min till veggies are soft and chicken is cooked

I would roast it as well. very simply with olive oil, salt and pepper.

on the stovetop, I'd saute chopped onions and garlic in OO, then add diced celery and carrots. let that all cook together until a little soft, add 32 oz of low sodium chicken stock (i like Imagine).

let that cook for a while, adding salt and pepper to taste.

in ANOTHER pot I would boil water to make cheese tortellinil.

when the chicken was fully roasted, shred and add to the broth, taste for seasoning, then grate fresh parmiggiano into the broth.

spoon tortellini into the bowl, then add soup on top. serve with fresh baguette.

my husband is a big fan.

use rest of chicken for tacos the next day.

So stupid, but how do I *shred* the chicken? I know, so stupid. But I'm a vegetarian and while I cook DH meat, roasting chickens is a WHOLE other endeavor! Chat Icon

not stupid!!! especially if you don't eat it.

just fyi, a smaller chicken you could just cut up and put in the pot....I am assuming this roaster is pretty large and would be a beotch to cut up and too big for the pot Chat Icon

after you take the chicken out of the oven, I just use a fork and scrape it like a maniac over the breast. then break up any larger pieces with my hands.

as for the legs, wings...my dh likes them so I would just cut them off whole and put one in the bowl then pour the soup and noodles...I wouldn't bother to shred it.

I'll be honest, I read this post this morning and was Chat Icon I never responded because I assumed that I had misread something and misuderstood. But this is exactly how I would respond. I always make my soup iwth a whole chicken. Saute some carrots and celery in EVOO in my stock pot, then plunk the whole chicken in, cover with water and boil when boiling I add the rest of my veggies and parsley and boil away.....I never cut up my chicken until the soup is done.

I love the idea of roasting and splitting.. but I'm too lazy.

I use a roaster when I make soup because I like the extra meat. Chat Icon

And soup freezes well.

I have a giant stock pot for larger stuff.
