Sheraton Vistana Villages - there are two places, the Resort and the Villages - The Villages are newer and I liked them a little better (although the Resort is slightly closer and just underwent major renovations).

Re: Disney - off-property with a kitchen needed
If you have kids, hands down Marriott's Harbour Lakes resort. You can find rates on ebay VERY inexpensively, or book directly through the Marriott site. They have AWESOME pools, sprinkler park area, a full activity schedule, mini golf, etc. It's a little further away from Disney though. It's right near Sea World.
Also Wyndham Bonnet Creek I hear is GREAT!! It's actually on the Disney property, but not an official Disney hotel. Again, you can find GREAT rates on ebay for book through the site directly.

The Omni Orlando is a beautiful resort. We stayed there in October in one of the villas and it was so nice. They even have a private pool for only the people staying in the villas. When we went we had the pool to ourselves

Re: Disney - off-property with a kitchen needed
We went in April and stayed at the WorldQuest Orlando Resort, it was a 3-bedroom suite brand new and was only $135/night plus I think a few dollars a day for room cleaning if you want it. It was like living in a condo and only a few mins from magic kingdom, and breakfast included. There is a discount for AAA members too, although we didn't have that.
