I tried to make it once - no where near a fake-out. It was very obvious that it wasn't potatoes.

not for mashed...but i bake it in the oven with salt pepper and a little bit of olive oil and i literally could eat the whole cauliflower, its so good!

LOL I did eat the whole head with my 2 year old daughter
I have made the fake-out but I use 1 part potato to 1 part cauli. Treat it like mashed potatoes with garlic, salt, pepper, etc. Good alternative to lower calories. If you don't add some potatoes it will not taste like mashed potatoes.

I steam the cauliflower with some minced garlic until it is mushy.
Then I don't have to add butter, but sometimes I will add a small pat when I mash them.

I usually steam the cauliflower in chicken stock... when it's tender I'll drain it.. mash it and add in some smart balance and skim milk, salt, pepper and nutmeg. Occasionally will throw in some roasted garlic for extra flavor.
I've also roasted it on the oven (tossed in pesto) and then mashed it when tender..gives it a nice flavor too.

Boil cauliflower cut in small chunk Once cooked drain Make a Bechamel/white sauce (use lower calory flour and milk) In baking dish, put cauliflowers, sauce (make sure it covers everything) Salt, pepper. Put low fat shredded swiss cheese (or cheese you like) Put in over until cheese is melted, light brown.

I have done the same. It turns out really good if you use equal parts potatoes and cauliflower.

ive made these before and they tasted great, slighty runny & sticky. i honestly thing i would add 1 potato to the recipe next time i make them.

I haven't tried this yet, it sounds yummy but definitely not low fat
Ingredients 16 ounce package frozen cauliflower (can use fresh) 8 ounce cream cheese with chives 8 ounce shredded cheddar 3 green onions, chopped 1/4 teaspoon salt or to taste 1/4 teaspoon pepper 3 pieces bacon, chopped and fried until crisp Paprika, optional
Directions Cook the cauliflower until soft, about 8-10 minutes; drain very well and break up florets a bit with a spoon
Put in a greased 8×8” baking pan or 2-quart casserole.
Mix in the cream cheese, cheddar, green onion, salt, pepper and bacon. Dust top with paprika, if desired.
Bake at 350º for 20-40 minutes, until browned and bubbly.

I just tried a great recipe last night and it was delish!
I boiled the cauliflower until tender, then drained well and patted dry w/ a paper towel to remove as much water as possible. Then add 1 tablespoon cream cheese and 1/4 cup parm cheese. I also added two cloves of chopped garlic that I put in EVOO and microwaved for 1 min so the garlic wasn't raw and too much. I also added salt & pepper. Next I used my immersion blender and pureed all ingredients in the pot. They came out really thick and looked liked mashed potatoes. I thought they were delicious, DH said not bad, but he HATES cauliflower.

I second this. Roasted cauliflower is SOO good!!! I cut it up into florets and put them in a ziploc and then shake around with seasoning and olive oil. Spread on baking sheet and cook at 425 for around 20 minutes. Definitely try it.
