Does anyone have a pignoli recipe they LOVE?
I told DH I would make him pignolis if he did the laundry while I am at work today...a food bribe! We usually do laundry together since the laundry room is in another apartment building and doing it alone is a pain in the arse. Anyways, pignolis are his FAVORITE cookie, and I've meant to learn how to make them for him for a while. So now this is my motivation.
Anyone have a great recipe they want to share? Thanks1

Martha Stewart has a GREAT recipe for pignoli cookies. (She calls them pine nut cookies though, I think) I don't have it on the computer, but it's probably on her website. They're pretty easy to make also. (That's my husband's favorite cookie also)

I've used this recipe before
If I remember correctly I cooked them a little more than recommended - but it may just be my oven, it always seems that I have to do that. They weren't as dark as you get them at the bakery, but I was afraid of burning them!

Thanks! You may want to try an oven thermometer. I found out my oven was off by 100 degrees and I was burning everything!
Where can I buy Solo almond paste? In the supermarket?

Yeah, we tried the oven thermometer and it came out the correct temp, so I dont know what the deal is...
The almond paste is in the supermarket, near the pie crusts/pie filling/pudding section usually. Sometimes the pignoili nuts are hard to find - in Stop and Shop they're actually in the produce section, a little plastic container of them.

I am pretty sure it's the wrong one because it didn't say almond paste. I looked online and they have almond paste AND almond cake filling. So I asked DH to get some on the way home from work. We'll try another supermarket to see if they have it (we're in MD)

I've used this one--I read to use the can, not the tube, I think it makes a softer cookie, if that is what you are looking for. I got it in a cooking supply store though.
ETA-I have also found that rolling the balls in the nuts made a mess & overloaded them with nuts, so I just pressed them onto the tops, but that could just be me doing it wrong!
I don't remember what recipe I have at home, but it is similar to the Martha one.

Just a hint about making them...I freeze the almond paste and then grate it into the bowl. It makes them much easier to make and the almond paste much easier to handle.

Thanks girls! I made them tonight and I'm waiting for them to cool before we try them. The pine nuts are so fragrant when they cook. They smell SO good!

Ohhh, they came out good! They were definitely cooked through, but still soft and cakey. I guess that is the almond paste at work.
