Looking for: Pignoli cookie recipe
Does anyone have a good pignoli cookie recipe? I've seen a bunch on the net but I'd prefer to make one that's already been tested.
I just bought a stand mixer (Great mothers day deal!) so now I need to make some cookies! The people at work know I have the stand mixer (got delivered to the office) so now I'm on the hook to make some cookies for them too.

Ingredients: 1/2 cup sugar 1/4 cup unsifted flour 8oz almond Paste Pine Nuts 1/2 cup confection sugar 1/8 tsp salt 2 egg whites
Directions: Preheat oven to 300 degrees. Grease cookie sheet.
Mix together sugars, flour and salt. Put aside. Break up almond paste into small pieces. Add egg whites and beat with an electric mixer until blended smooth. Stir in flour mixture.
Using Round teaspoons, scoop mixture and put on cookie sheet. Pout on pine nuts and press nuts slightly into dough
Bake for 20-25 minutes. Cool on the pan for 1 minute then cool on wire rack. Sprinkle with confection sugar when completely cooled.
Store in an airtight container.
I made them for the 1st time this past Christmas and they were delicious!

I have used this one from Good Housekeeping and they always seem to go.
8oz Almond Paste 3/4 cup confectioners' sugar 1 large egg white 1 tablespoon plus 1 teaspoon honey 1/2 cup pine nuts
1. Preheat over to 350. Line 2 large cookie sheets with parchment paper
2. Crumble almond paste into food processor with knife blade attached. Add sugar and process until paste i textgure of fine meal. Transfer to large bowl. Add egg white and honey. With mixer at low speed, beat until blended. Increase speed to medium-high and beat 5 minutes or until very smooth.
3. Spon batter into pastry bag fitted with 1/2 inch round tip. Pipe 1 1/4 inch rounds, 2 inches apart on prepared cookie sheets. Brush cookies lightly with water and cover cookies wompletely with pine nuts pressing nuts lightly to stick.
4. Bake 10-12 minutes rotating sheets between upper and lower rack halfway through baking until golden brown. Slide parchment paper onto wire racks and let cookies cool completely on parchment paper.
It is suppose to yield about 2 dozen cookies but I have never gotten that much. I think because I make them to big.
