No Cook Avocado Bisque
2 lg avocados 2 c buttermilk 4 scallions, green & white parts sliced separately grated peel and juice of 1 lime 16 ice cubes salt 1 lb tomatoes, coarsely chopped 3 oz feta cheese, crumbled 6 oz tortillia chips
1. using a blender, puree 1 avocado, the buttermilk & scallion whites. Add the lime peel & 3/4 of the lime juice. With the machine on lowspeed, blend in the ice cubes, 1 @ a time until smooth. Season with salt; refrigerate.
2. Meanwhile coarsely chop the remaining avocado & transfer to a medium bowl. Add the tomatoes, feta, scallion greens & the remaining lime juice.
3. Divide the soup among 4 bowls. Top with the avocado salad & tortillia chips. Serve with the remaining tortillia chips on the side.
Please let me know how this is if you try it. It sounds so good.
