Does anyone have a suggestion for an easy dessert that I can make for 50 people?
I was originally thinking cake pops or cream puffs but I don't have enough fridge space for that.

how about a sheet cake? or cookies & brownies, you can get a 5 lb container of choc chip cookie dough from BJs.

how about a trifle made with bronwies and pudding
you could triple the recipe...or more and put it in bowls

what about ice cream sandwiches?
my cousin makes them so good with oameal raisin cookies and butter pecan ice cream but obviously you can do any cookie/ice cream combo you like.
she bakes the cookies, allows them to cool completely then scope a bit of ice cream, tops with another cookies and VIOLA.
best part is, they an be made in advance. she wraps them in a bit of wax or parchment paper and puts them in the freezer in a storage bag. they are a HUGE hit. and it won't take up any fridge space!!!!

S'mores pops.
Get lollipop sticks, stick them in marshmallows, dip in melted chocolate and then dip in crushed Graham cracker crumbs

Make Oreo "Mud" and Oreo "Sand"...they are easy to make and you can make big batches of them! If not, how about some good old fashioned cupcakes?
