Last week I did a pork roast with cranberries and pineapples (one can of each), a little nutmeg... about 6-8 hours in the crockpot and it was FANTASTIC!
We also do alot of beef roasts... throw in beef broth, onions, garlic, red wine, shallots, pretty much anything :)
Its so hard to mess up something in the crock pot.
A fave of ours is pulled pork. Boneless pork ribs.. we use grillmates pork rub on them, broil them in the oven 10 minutes each side, then throw them in the crockpot on low with a little water for about 8 hours and add sauce during the last hour or so.
Two things we learned the hard way... -Always make sure there is lots of liquids in the crock pot. -Dont add anything with sugar until the last hour or so, or it will char.
NOW IM HUNGRY!

What liquid did you add to the pork roast besides the pineapple juice? It sounds yummy

i've made chicken cacciatore in the crock pot a few times that came our really well! put the chicken breasts in the crockpot with a big can of crushed tomatoes, one cut up onion, one cut up bell pepper, and one cut up cubanelle papper ( slightly spicy). add a little bit of EVOO and some balsalmic vinegar. let it cook for about 6-8 hours. when you're ready to eat, the chicken will kind of "shred" up... so it becomes more of a stew than like traditional chicken cacciatore. its great to serve over rice or pasta

The juices that were in the cans of cranberries and pineapples were enough to keep it moist. Dont drain them before you plop it in

I got the book "fix it and forget it" and it is a book of recipes for a crock pot. I have tried a few out and they have been great. There is so much to choose from!!!
