I believe it's a 30 day trial, it used to be that you couldn't save or print from the trial version, but I believe they have changed that.

GIMP is a free "version" of Photoshop. It's not the same product, but it does the same things. It's a great way to practice all the techniques that PS can do, but without spending any money. I've been using it for years, and I don't think I've come across something that it couldn't handle.

I've never used GIMP, so I can't tell you which is easier/better. Photoshop is a relatively expensive program if you aren't going to use it a lot it probably isn't worth the $650 for the standard version or $1k for the extended version. Often times if you get a new scanner, it will come with photoshop elements, which is a scaled down version.
Between the two versions of Photoshop CS3 is the standard version of photoshop that is basically a digital darkroom, the commands and effects are all based off of darkroom terms, so if you are familar with processing images in a darkroom, the lingo will make sense.
CS3 extended is the standard program + additional features designed for people who use the program in conjunction with vector programs or who need scaling features. This is the version I use because I use photoshop for civil engineering as well as marketing.
