How do you make it then, as eggplant tends to get very soft when cooked.

We tried it with zucchini...didn't satisfy the pizza craving for us...I would rather make the 2 ingredient dough (self-rising flour and greek yogurt) and load it up with veggies. Or make eggplant parm or rollatini...

Gotcha. kind of the same as cauliflower pizza. Some things should just not be messed with. The whole point of pizza to me is the dough, sauce and cheese. Toppings optional.

Yeah, don’t mess with pizza.
Try eggplant meatballs:

Re: eggplant pizza? yay or nay?
Sounds like I'd rather just not eat at all. Same with zoodles. Just....no
Dh no longer eats bread or flour at all and to be honest he has not yet found a suitable substitute for pizza...and he has tried a lot. He just resigned himself to not eating it

I eat zoodles and spaghetti squash but every time I do, I die a little inside.
I have to dump a pound of parmesan on them to make them edible and I rationalize that by saying "better than carbs."

See, I love zoodles. I’m also not the biggest pasta fan, so there’s that. I think I eat pasta about once a month.
But pizza, no, don’t mess with pizza.

Yeah, I can't do zoodles. It's just not pasta. I'm not a huge fan of zucchini to begin with, it is so bland. We don't eat a lot of pasta anymore, just once in a while when I have a craving for it.

See I'd rather eat nothing. Just nothing on the side. It's better than gagging that shit down.
And to be honest, I sometimes think, I"d rather be fat, and happy and enjoying myself and eating food that tastes good, than have to eat food that makes me want to give up my will to live. But that's just me.

Re: eggplant pizza? yay or nay?
I make this sometimes: Julia Child’s Eggplant Pizza
It’s not really a pizza replacement, even though that’s the name. It’s pretty great though!

That actually looks yummy- like an individual eggplant parm. I think that's the thing- you can't go into it saying, yes this is pizza. You'll be disappointed. It's a totally different craving.

Absolutely. It’s like an eggplant parm without all the annoying breading and frying and all that shit. If you’re generally craving an Italian taste but want to watch carbs, this works. Serve it with a salad and you’re good for dinner. It ain’t pizza though!

I make my eggplant or zucchini parm similarly to this..,I grill it, then layer it. I do it partly to be healthier, but also because I'm lazy and grilling is easier than breading and frying.

Re: eggplant pizza? yay or nay?
Another good way to do it is to dip it in an egg Parm cheese mixture (no bread crumbs at all). This way you get extra protein. Still, it’s fried, but they don’t bread eggplant in Italy for eggplant Parm. Let me know if you want the recipe.

Re: eggplant pizza? yay or nay?
If you're looking for an alternate crust, try cauliflower crust... i think it would hold up better than eggplant.
