One of my favorite things is the Holiday Train Show at the NY Botanical Garden (Bronx).
In general I avoid going to plays since I usually go off-season.
I would go to:
-Tree @Rockefeller Center -Skating in either Rock Center or Wollman's Rink -Sundays at Bryant Park (if it's not too cold) - hanging out as the kids go on the carousel.

I must look at Saks, Bloomingdales, Lord & Taylor's and Barney's windows.
I must visit the tree at Rock Center at least once. Of course I curse myself for doing it because it's so crowded, but it's only a block away from work so it's not too bad.
I always go to FAO Schwartz. I don't buy anything, but there's something about that store that really brings on the holiday season for me

The Metropolitan Museum used to put up a beatuiful tree and nativity. I used to go when I went in to see the tree at Rockefeller Center.
I like to look at the store windows too.

because it's crowded and no one ever actually buys anything there

If you're up for going to the Bronx, the Zoo at night is cool too- thy have animal shaped moving light structures & ice sculptures & the sell hot chocolate & the indoor exhibits are open.
In Manhattan, you can go to Macy's & see Santa. My cousin I did that in our 20's, just because we had never done it before.

I love the tree at the Met. Here is it a couple of years ago. Image Attachment(s):
