This is my and my husband's favorite thing!
• 1 beef eye of round roast (I use 3 – 4 pounds) • 1 tsp salt (I use Kosher salt) • ½ tsp cracked black pepper • ½ tsp paprika • ½ tsp thyme • ½ tsp garlic powder • ½ tsp onion powder (for the spices, you can certainly substitute the thyme for rosemary if you have that in the house or use any other spice rub you have, like Montreal Steak Rub, etc) DIRECTIONS 1. Preheat the oven to 500 degrees F. Mix all the seasonings in a small bowl. Rub the spices evenly over the roast and place in a roasting pan or baking dish. Do not cover or add water. 2. Place the roast in the preheated oven and cook for 10 minutes, then reduce the temp to 475 for 5 – 7 minutes, then turn off the oven and let the roast sit in the hot oven for 2 - 2 1/2 hours (a little less for a smaller roast, a little longer for a larger roast). Do not open the door at all during this time! 3. Remove the roast from the oven, the internal temperature should have reached at least 145 degrees F (65 degrees C). Carve into thin slices to serve.

I was going to post the same thing! It's outrageous!!!!
Only my recipe is 5-7 minutes PER POUND at 475. For a 3lb roast I cook it for 20 minutes and then turn off.

Just wanted to post an update on my attempt to make a roast...this recipe was a huge hit.
DH LOVED it...he couldn't get over it. I have to say that I had to play around with the cooking directions. I did the whole heat to 500 than drop to 475, than shut off...but the oven door was ice cold in an hour.
So I turned the oven to 350...& just kept monitoring it with a meat thermometer. Once it got to 140 I pulled it out...it was perfect!!
Def making this again THANKS

Yes, I should have warned you that could happen! If the insulation on your oven isn't great, it will let the heat out too fast and cool off quicker. Glad you realized it after an hour and were able to salvage it

I have made it so many times, it is our FAVORITE!!! The recipe I got it from said 5 - 7 minutes per pound at 475, like you said. I prefer the top a little "crispier" so I start it at 500. That is also why I cook it a little less than the recommended 5 - 7 minutes per pound
