I usually do this:
Loosen the skin on the breast and face this up in the pan. You can put thin pats of butter or cutrus fruit under the skin. I do the butter with herbs in it(they sell a jar of poultry herbs) I cut up potatoes with salt and pepper on them and place them around the bird. Then cook.

I make this..... (For thanksgiving I added some white wine to the pan, All I can say...YUMMY, best turkey I ever had!)
Herb Roasted Chicken Ingredients Herb Roasted Chicken: 1 (3 1/2 to 4-pound) whole chicken 1 1/2 tablespoons salt 2 teaspoons black pepper 1 tablespoon minced garlic 1 tablespoon chopped thyme leaves 1/2 tablespoon chopped sage leaves 2 tablespoons chopped parsley leaves (reserve the parsley stems) 1/2 cup olive oil 1 lemon, quartered 2 bay leaves Preparation Preheat the oven to 475 degrees F. Wash the chicken and pat dry. Season well inside and out with the salt and pepper. In a small bowl, combine the garlic, thyme, sage, parsley and olive oil. Rub the olive oil and herb blend into the cavity of the chicken as well as all over the exterior. Place the parsley stems into the cavity of the chicken, and squeeze each lemon quarter into the chicken and place the rind in as well. Put the bay leaves inside the chicken and place the bird in a roasting pan or a saute pan, and put it into the oven. Roast for about 1 hour, or until the chicken is golden brown, and the juices run clear. Remove from the oven and let sit for 10 minutes before carving.

I spray in and out with Pam spray
Dust in and out with: Garlic Powder Onion Powder Black Pepper Rosemary Paprika
(you can use as much or as little of each as you want)
Cook as directed on the package.

FH loves roast chicken. I make a few different versions.
My old stand by is to loosen the skin and rub under the skin with butter, season salt, pepper and garlic. Then I sprinkle the top with season salt, pepper and garlic. I put a cut up orange, a cut up lemon, a couple of sprigs of rosemary and a few sprigs of time in the cavity after I salt it and roast.
Now if I am doing it SPECIAL I will brine the chicken. I make a brine from Chicken stock or store bought broth, Apple cider, kosher salt, pepper, fresh thyme, fresh garlic and fresh rosemary. Let it sit for a few hours - or overnight. Then dry, season skin with salt, pepper and garlic and roast.

Thank you for posting! I made this tonight and DH said it was better than his Mom's!
I added some butter under the skin too, and basted the chicken every 20 minutes.

I made the recipe from NewlyMrs also and it was fabulous!!!!! I will absolutely make again since it was so easy. I used an 8 lb bird so I just doubled the recipe. The cooking time called for 2 1/2 hours instead. It came out great.

For Turkey Day, I get the turkey drunk with a little white wine and use it for the thanksgiving turkey....It's the best ever!!!!!

Put a 1/2 inch of water or white wine in roasting pan.then a bag of baby carrot's a few stalks of diced celery and 1 diced onion,clean chicken stuff cavity of chicken with the same veg mix,then onion powder, garlic powder,salt pepper,olive oil the chicken(enough to coat).....place in roasting pan cover with foil bake for 1 hour,but check about every 20 minutes and baste,remove foil and allow skin to brown.when chicken is done remove from pan with veggies and add flour to juices left in pan,Makes a yummy gravy.
My italian version is zucchini, peppers onions and italian dressiing marinade to coat chicken....Serve it with red potaotes cut into large chunks throw in a baking pan coat with olive oil,onion garlic salt pepper and italian spices..so.........yummy.....
