Re: Fall Foods

LOVE fall! Lots of great seasonal foods to cook with, and I'm definitely more in a cooking mood when chillier weather comes back.

I am excited to make soups again. So comforting.

Also, colder weather dinners like pot roast and other roasts, and things like hearty stews and chilis. It's always so comforting to have a warm meal simmering on the stove or roasting in the oven on a crisp fall day.

I love baking, esp. with apples (we are hoping to squeeze in an apple picking trip). So then I would do apple pie, apple crumble, apple bars, baked apples, apple butter.

I also love butternut squash. I have a great (and healthy) recipe for slow cooker risotto made with pearl barley and butternut squash. Also love Giada's butternut squash lasagna recipe and Ina Gartnen's warm butternut squash salad.

Pumpkin bread! Also anything Thanksgivingish...turkey or chicken with gravy, mashed potatoes, stuffing, green bean casserole.

I bought sweet potatoes today to roast and then walked into my 1000 degree house and realized there was no way. I can't wait to be able to turn on the oven again!

last night i made one of my fav fall/winter foods - mashed butternut squash with breadcrumbs

cube a butternut squash, put it in a pan with salt, pepper, and olive oil, and add whatever you like, garlic, onion, apples, seasonings, etc. roast it. when it's done, mash it and spread it out in the pan. cover with breadcrumbs mixed with herbs and drizzle with olive oil, put back in the oven until browned.
