FANTASTIC Recipe - Chicken & Cranberry Bundles:
Last night, DH made me this *amazing* recipe. First, I can't believe he attempted it. Second, I can't believe how perfect it came out - and he even said, it is REALLY easy.
It is a 30 minute meal. The recipe: Chicken and Cranberry Bundles...
Prep Time: 10 minutes Cook Time: 20 minutes
Ingredients: 1 pound cooked grilled chicken breasts, cut into chunks (you can sub turkey if you want - use leftovers from a turkey dinner, whatever) 1 cup diced Brie (this is probably the only item you might have to pick up at the store - but we are a cheese house and actually did have it on hand lol) 2 tablespoons cranberry sauce 2 tablespoons chopped fresh parsley 9 sheets of filo pastry (ok, you might have to pick this up too - but easy to find and cheap - as well as the other ingredients - it totaled 10 bucks). They should be about 18x11 inches each. Thawed if frozen. 1/4 cup of butter, melted 1 or 2 cloves of garlic (depending on how much you like) Salt and ground black pepper
Serves great with a salad on the side - DH made a spinach leaf salad with cucumbers, granny smith apples, cherry tomatoes, and fresh mozzarella cheese.
*Preheat the oven to 400 degrees. Mix the diced chicken and brie, the cranberry sauce, and chopped parsley in a bowl. Season with salt and pepper. DH also added a clove or two of garlic (I taught him well LOL!). We always season everything with a bit of Goya too (thank you, Melissa).
*Cut the filo sheets in half widthways and trim to make 18 squares. Layer three pieces of pastry together, brushing them with a little melted butter so that they stick together. Repeat with the remaining filo squares to give SIX pieces.
*Divid the chicken mixture among the pastry, making neat piles on each piece. Gather up the pastry to enclose the filling in neat bundles. Place on a baking sheet, brush with a little melted butter and bake for 20 minutes, or until the pastry is crisp and golden. Serve HOT with a great salad.
This meal knocked me off my feet - it was freaking delicious and SO easy to make. He said you just have to get the 'hang' of wrapping up the filo sheets so that they look like little bags of loot, KWIM? I wish I had a pic! I'm going to try and find one!!
TRY this recipe!! Wonderful for having guests.
Found a decent pic - this is not from the recipe featured above but it will give you a small idea. Picture them BIGGER - a little smaller than a softball. He didn't wrap them with anything at the top so remove the green thing - he just squished them together and they stayed. Like little bags of money! Image Attachment(s):

Variations:
These little parcels can be made with a variety of fillings and are great for using up left-over cooked meats.
*To make ham and cheddar bundles, replace the chicken or turkey with ham and use cheddar in place of the brie. A fruit-flavored chutney would make a good alternative to the cranberry sauce -- or stick w/ the cranberry.

It would be a good use for left over thanksgiving dinner. Maybe make little cupcake size ones -

Yes, definitely.
You could make them smaller for appetizers - they would be great for parties, like bite-sized ones.
But the ones DH made were a little smaller than a softball. I had TWO of them because I was so hungry and couldn't even touch the salad I was so stuffed!! They are pretty big. Six of them would be great if you had a couple over for dinner or if it was just you and DH -- because we have two of them leftover. If you had a couple, you just have to add a few sides.
