Jamie Oliver (the Naked Chef) has a great one. It's for a white fish - we usually do flounder but his recipe says it can be used for brill, turbot and halibut. Basically you crush some rosemary (a handful if it's fresh, less than that if dried) in olive oil (6T). Coat the fish with the olive oil mix. Lay 4-5 lemon slices on each fillet/steak you have. Sprinkle capers and anchovies over it (we leave that part out). Drizzle with more of the olive oil mix. Bake for about 15 min of off the bone, and 25 min if on the bone at 400. When you take it out of the oven you splash it with a little white wine and squeeze a little lemon juice over it. Let it rest for 5 min. It's great with risooto.

Giada has a great salmon recipe too.

Salmon Baked in Foil

3 tomatoes, chopped, or 1 (14 oz) can diced tomatoes in juice, drained
2 shallots, chopped
2 T plus 2 tsp olive oil
2 T fresh lemon juice (from about 1/2 a lemon)
1 1/2 tsp chopped fresh oregano or 3/4 tsp dried
1 1/2 tsp chopped fresh thyme or 3/4 tsp dried
1 tsp salt
3/4 tsp freshly ground black pepper
4 salmon fillets (about 5 oz each)

In medium bowl, stir tomatoes, shallots, 2 T oil, lemon juice, oregano, thyme, 1/2 tsp salt, and 1/4 tsp pepper. In center of each of four large sheets of foil, spoon 1/2 tsp oil. Pleace 1 salmon fillet atop each sheet and turn to coat with oil. Sprinkle salmon with remaining 1/2 tsp each of salt and pepper. Spoon the tomato mix over salmon. Fold sides of foil over fish and tomato mix, covering completely, seal it closed. Put on large baking sheet. Bake at 400 until salmon is cooked through, about 25 min.
