For all you meat eaters...
Can you post your easy for a vegetarian to follow favorite recipes? I have a carnivore husband and a stouffers eating grandfather who I need to cook for. The former is getting tired of tofu and the latter needs something homemade. Chicken or beef preferred, no pork, no steak (DH makes his own).

what do you want to make?
You can easily buy a london broil, marinate it over night and cook it on the grill or george foreman the next day!

Stuffed Peppers:
1 pound ground beef 1/2 cup uncooked long grain white rice 1 cup water 6 green bell peppers 2 (8 ounce) cans tomato sauce 1 tablespoon Worcestershire sauce 1/4 teaspoon garlic powder 1/4 teaspoon onion powder salt and pepper to taste 1 teaspoon Italian seasoning DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Place the rice and water in a saucepan, and bring to a boil. Reduce heat, cover, and cook 20 minutes. In a skillet over medium heat, cook the beef until evenly browned. Remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward. (Slice the bottoms of the peppers if necessary so that they will stand upright.) In a bowl, mix the browned beef, cooked rice, 1 can tomato sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Spoon an equal amount of the mixture into each hollowed pepper. Mix the remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers. Bake 1 hour in the preheated oven, basting with sauce every 15 minutes, until the peppers are tender.
TRICK: Instead of making the rice from scratch, buy the Uncle Ben's instant rice. It comes in a pouch. You just rip the pouch and microwave for 90 seconds. So much easier.

I used this recipe and posted it on LIW and boosh/Don and Palebride used it and LOVED it. You could also put cheese in the middle.
Prep Time: approx. 15 Minutes. Cook Time: approx. 1 Hour . Ready in: approx. 1 Hour 15 Minutes. Makes 6 servings.
1 1/2 pounds ground beef 1 1/4 teaspoons salt 1 egg 1 dash ground black pepper (I used more than a dash...DH likes "kick") 1 cup bread crumbs 1/2 cup milk 1/3 cup steak sauce, (e.g. Heinz 57)...I used A1 Steak Sauce 1 onion, chopped 1/2 cup diced green bell pepper
***I also threw in some fresh minced garlic (from the jar) and Italian seasoning
Directions 1 Preheat oven to 350 degrees F (175 degrees C). Lightlygrease (or use a non-stick) loaf pan. 2 In a mixing bowl, combine the ground beef, salt, egg, black pepper and bread crumbs. Pour in the milk, 3 tablespoons of the steak sauce, onion and green bell pepper. 3 Place the mixture into the prepared loaf pan and shape into a loaf. Brush the top with the remaining steak sauce. 4 Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing

Shepards pie is really simple!
Brown about a pound (or more) of ground beef in a little oil w/ onions & garlic (if you like it) add a little bit of worcestire or tomato sauce or beef gravy....put it in a corningware. Open a can of corn & pour it over the top & spread it (like a layer), then top with mashed potatoes. We put cheese over the mashed potatoes
Then cook in the oven at 350 for about 25-30 minutes...everything is cooked, so all you really need to do is heat it or make sure the cheese is melted.

u can marinate it in a ziploc bag in bbq sauce, or teriayki sauce.
it is cooked = if u like it medium, when it is slightly pink inside and very dark brown on the outside.. u can cut into it if u like

here's a recipe I invented that uses ground beef... the beauty behind this one is that you can make a portion of it veg-head friendly... so you don't have to cook anything twice
2 packs sliced mushrooms 4 peppers 1 huge onion, diced 2 cans butter beans (those giant beans), drained 1 small can (about 4-6 oz) plain tomato sauce 2T ground cumin 1T oregano 1/2 T ground coriander 1T smoked paprika (found in bodegas) 1T chili powder cayenne to taste (about 1t-1T) salt 9 oz grated low fat cheddar/jack 1 lb ground beef
In a very hot oiled skillet (preferably cast iron), fry each veg individually (so they don't steam in their own juices). When each is done, transfer into a serving dish. I usually do shrooms, then peppers, then onion. Then, add a bit more oil, and fry beans, and transfer to bowl. Add tomato sauce and all the spices. Salt generously, since that's the only salt source for the dish.
transfer some of veggies and sauce to bowl and toss (for the veg-head). Add some cheese.
To the rest of the sauce, add the beef. When cooked through, pour over remaining veggies in bowl, and add remaining cheese and serve. Great with guac and yellow corn chips
this whole thing takes under 30 min
