Found a homemade recipe for chicken nuggets, and Kristina LOVES them!!!!!!!
I am soooooooooooooooooo happy!!!!!!
Here is the recipe for anyone that is interested:
2 chicken breasts -- skinned and boned
1 1/2 cup fine dry breadcrumbs
1/3 cup Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon dried basil -- optional (I used fresh basil chopped fine)
1/2 cup melted butter
Directions:
Cut chicken breasts into about 1 1/2-inch squares. Combine dry ingredients in small bowl. Dip chicken pieces in melted butter, then in crumb mixture. Pat crumbs on to coat. Place on greased baking sheet and bake at 400 degrees F for 15 to 20 minutes or until lightly browned.
This recipe from CDKitchen for Baked Chicken Nuggets serves/makes 36 pcs

When I make chicken cutlets, I always make a batch of cubed chicken for the kids.
