Anyone have a recipe for Homemade Chicken Noodle Soup
I really want to make a big pot of it and freeze for the fall/winter ahead. I don't have a crock pot, so I will have to do it the old fashioned way...

Here's my go-to:
I break 2 carrots and 2 stalks of celery into big chunks by hand and throw them in a pot. Add a roughly chopped onion and then a whole chicken (cleaned - no guts) and put it in a large pot. Cover it with stock - about 5 or 6 cups (I make homemade - but you can used canned if you don't have any handy). Add about a tablespoon of Chicken Base (you find it in stores by the boullion). Add a palmful each of fresh rosemary and fresh thyme, Throw in a Tablespoon of Bell's poultry season. Put in a bay leaf and a few chopped sage leaves. Turn the heat on medium-high until you see it start to bubble around the edges - NOT a full rolling boil. Cover and turn down the heat as low as you can. Chop up some potatoes (about a cup). Throw them in after about a half hour. After about an hour I take the chicken out and let it cool on a platter. I fish out the big chunks of carrot and celery and add in a cup of fresh sliced carrot (or a handful of baby carrots) and a palmful of fresh sliced celery. Keep the pot on low. take the meat off the chicken and add back into the pot. IF YOU WANT more meat you can chop up a chicken cutlet and poach it in there. It doesn't really absorb any of the flavor but it makes my husband think he's getting more meat. .
Now - I do NOT add the noodles to the pot I make them seperately becuase otherwise they absorb too much of the precious chicken broth. I put the noodles in the bottom of the soup bowl and then ladel in the soup and serve. garnish with a lemon slice (I love a little squeeze of lemon in my soup) and some parsley.
If you are being reallyl conscious about fat, you can skin the chicken before cooking. You can also make the soup and refridgerate it a day and then peel off the fat that rises and solidifies on the top before heating the next day. Make the noodles the day you will be eating the soup.

Here's my easy peasy take help from the store chicken noodle soup
Boil 4-6 boneless skinless chx breasts in water until cooked through.....Pull out and set covered in fridge
In a LARGE pot add:
2T EVOO 4 medium carrots 1 clove garlic 1 small yellow onion 4 small celery stalks Salt and Pepper
Cook on med high for about 4-5 min so veggies get a bit crisp and brown
Now add
1 HUGE container of chx stock 1 HUGE container of chx broth 1 bay leaf 2T parsley 1T oregano
Let it all come to a boil for about 1/2 hr or so
Grab chx from fridge and cut it up or shred it
Add chx to the pot
Cook another 15 min or so
Add Kluski noodles (MI specific noodle that is a dough noodle, and IMHO the ONLY noodle to use)
Cook another 15-20 min and serve hot with grilled cheese!

whole chicken cut up or those big chicken legs when they r on sale. Take a big soup or pasta pot. pour a little evoo on bottom of pot. While its getting hot, add some chopped garlic- 2-3 clloves and a choppd onion depending on how much ygu want. Once its in there you can start peeling and slicing your carrots. I peel about 5 , add some sliced celery, im not a big celery fan so i used about half a stalk. I buy the pack of soup greens from the produce section of the store. Cut up all of those greeens and add to pot. Also take a few scallions and slice them thin and add as well. Once everything is added in including the cleaned- cut up chicken, i add the chix broth to the pit. I add about 5- 6 cans or until the chix is covered. After about an hour or so of the chicken cooking on med-low, i add about 4-5 small potatoes peeled and quartered. about an hour later- iseason with salt and pepper and a bay leaf. Let cook bout 3 hours on med-low. I add a couple of handfuls of elbow macaroni and let cook. Once the macaroni is soft, i serve in individual bowls and serve with crusty bread and grated parm cheese YUMMM!s

sorry onmce the chix cooks- i take it out and cut it off the bone and then add it back to the pot
