Fresh Pineapples, shelf life ?
I was dying for fresh pineapple the other day, we had a BBQ and friends over, and of course with the ice cream and cookies, we forgot to cut up the pineapple 
How long can it sit around? we're going away all next week, will it go bad by that following weekend (10th), should I cut it up this weekend? decisions, decisions

We're gone all day tomorrow  (christening and wedding) so Im going to have to eat this all up myself tonite and sunday
Now my next question, is there a strategy to cutting it up?
Also, Id love some fresh COCONUT, whats the deal with opening those? We used to eat fresh coconut all summer in Italy years ago  once we bought our own, and it took FOREVER to get it open, smashing it against the wall, hammer, you name it...
anyone?

I would first cut it in half. Then cut the sides off, maknig sure to get enough of the brown off. ENJOY IT!

i always lay it on it's side and slice it that way....so you're left with circle shapes...
then i cut the skin around it....i find that way to be the easiest....

how does it work?
You cut off the top of the pineapple - and this thing screws into the top and you keep turning it until it hits the bottom of the pineapple, then you pull it out it takes all of the pineapple out except for the core - it cores the middle out and then all you have to do it take it off this thing and cut the pineapple. It is soooo easy!!
