Fun activity for toddlers
I got a Gingerbread Christmas Tree at the Christmas Tree Shop the other day. Jack and I just put it together and decorated it. He loved it - and the best part is that it took about an hour from start to finish! I love crafts that last more then ten minutes.
Just thought I would pass it on. I'm sure they have it at AC Moore and Michaels too! 
ETA: It is much easier then a Gingerbread house I think!

We got the rice crispies treat gingerbread house from michaels bc it seemed easier, looking forward to decorating it with DS. Glad you had so much fun!
