Maybe a gift card to their fav restaurant.
If they have a specific hobby you can get something related to that

A few years ago, this woman I used to teach with retired. She got a gift basket with a bunch of her favorite things but the cutest thing was a beach towel that said "I used to teach, but now I beach". It was in a beach bag, with sunscreen, flip flops, etc. It was adorable.

I'm a social worker but lead a day program and a lot of my clients refer to it as "school".
In any event, the woman who I took over the role from retired in May. Everyone pooled their money and I believe they got her an Amex or similar money giftcard.
She ended up buying a really nice camera with it and has come back on occasion to take pics of everyone so she has the memories.
If she has any hobbies, you can also give her a gift around that.
This woman loves to garden so I went and got her a giftcard to Home Depot for gardening supplies.

Thanks for the ideas! I saw a bunch of cute things on Etsy so we are now thinking maybe a piece of jewelry and a cool theme basket. That beach towel idea is adorable.
