Good stuffed peppers recipe?

Make a pot of rice. Instead of water use beef boullion or beef stock.
Seed your peppers and put the empty pepper shells in the oven for about 10 minutes @ 375. You can leave them in longer if you like softer shells - or less long if you want them more firm.
Saute 1 large chopped onion (sweet or white) and a few minced garlic cloves in a bit of olive oil. When soft (about a minute) add ground turkey. Brown. Add pepper and beef boullion paste to taste. Drain fat. Add a handful of grated Gruyere and Reggiano (you can use mozzarella, provolone, romano, asiago.. or whatever Italian cheese floats you instead.. or a mix). stir in some frozen peas and some red sauce (believe it or not - I use plain canned tomato sauce for this). Add the cooked rice so there is a ratio of 2:1 in favor of meat.
Spoon stuffing into the pepper shells, top with sauce and more grated cheese. Pour the rest of the sauce in the bottom of the pepper pan. Put it back in the oven for about 7 minutes until cheese is bubbly and melted. Serve.

its become a staple in my house , when i make meat stuffed peppers i use this recipe, even amazed my dad , who i swear was a chef in another life, ( the only difference i do is , instead or cubano i use the red peppers..) its so so good.. enjoy,, 1/3 cup Arborio rice 8 cubanelle, banana, or other long, thin-fleshed peppers 3 tablespoons olive oil 1 medium onion, finely chopped 1/2 pound ground beef or pork (or a mixture) 1 egg, lightly beaten 1/3 cup grated Pa r mesan cheese 3 tablespoons finely chopped flat parsley 2 teaspoons finely chopped fresh oregano 3 cups tomato sauce (see page E3) 1. Bring a large saucepan of salted water to a boil. Add rice and let it simmer for 12 minutes or until it is tender but still has some bite. Drain and cool.
2. Set the oven at 400 degrees. Have on hand a 9-by-13-inch baking dish.
3. Cut the stems from the peppers, and use a teaspoon to scrape out the seeds and membranes.
4. In a small skillet over medium heat, heat 2 tablespoons of the olive oil. Cook the onion for 4 minutes. Scrape the onion into a mixing bowl. Add the ground meat, egg, cheese, parsley, oregano, and cooked rice. Blend well.
5. Fill each pepper loosely with about 1/4 cup of the meat mixture. Rub the outside of the peppers with the remaining 1 tablespoon of oil.
6. Place the peppers in the baking dish. Roast them, using tongs to turn once or twice, for 20 minutes, or until softened. They will be lightly browned in spots. Remove the dish from the oven.
7. Pour enough tomato sauce into the dish to barely cover the peppers. Cover the dish with foil and return it to oven. Bake the peppers for 35 minutes or until they are tender and filling is cooked through. Remove from the oven and let stand for 10 minutes before serving

This one's a little different, but really delicious!
5-6 red peppers, tops cut off, seeds removed 1 lb ground chicken 1 can diced tomatoes 2 cloves of garlic minced 1 onion chopped 1 tbsp fresh basil, chopped 1 cup shredded smoked mozzarella 1/2 cup Carolina rice 1 tbs olive oil Salt and pepper to taste breadcrumbs
Preheat oven to 350

I followed a recipe in a book once for rice - didn't say it should be cooked - those were some crunchy stuffed peppers.
I use my meatball/meatloaf recipe. I like the Hunts Sauce - not the little tomatoe sauce, the BIG can - usually on the top shelf. I don't like it for pasta but I do like it on my peppers.
ETA - wrong stuffed vegetable

I picked up a tip from Rachael Ray - she grates her onion into some of her mixtures - I really like the flavor that way.

This is what I use! It's soooo plain - but it works really well for the stuffed peppers.. maybe because there is so much else going on.
