Please tell me how this should be punctuated etc...

or you can add an em dash instead of the coma before just.

Are you trying to write a rhyming poem?

If so, I would say....


My day was really special,
this is oh so true.
Surrounded by lots of people
who (not that) love me,
just like you.

I would say, people who love...
not people that love.

If not a poem, I would put a period after special and make the next line another sentence.But I am not sure if this is the most correct way to write this. This is just how I would do it.

I agree. You can use 'that' b/c it is a defining relative clause, but who sounds much better to my ears. No comma after people, b/c it is defining relative clause and they don't need commas.

ETA- you can do what you want anyway, b/c it is a poem, not a standard sentence, and you have poetic license.
