Greasing cookie sheets?
I have the air baking sheets, and to be honest, I'm not crazy about them, but beggars can't be choosers. I find everything sticks to them, and it's very difficult to put parchment down on them... it doesn't stay. I was baking Devil's Food Cookies a few weekends ago and greased the cookie sheets, just to see what would happen. They came out PERFECT!!! So here's my question... I have my huge Cookie Baking Extravaganza on Saturday. Should I just grease the sheets for everything... sugar cookies, thumbprints, etc? Anyone have any experience?

I use the Pam baking spray for EVERYTHING when I bake. Sometimes I even put parchment paper and the Pam on it. It's just such a huge difference as far as ease of getting things off the bottom (plus makes cleaning a snap).
Have you tried the baking mats?
I love these!

i have the silicone baking mats and they're wonderful. nothing burns or sticks.

Costco has a 3 pack of silpat 'knock-offs' for 15 dollars. There are 2 large and 1 small in the package.
Used them today and they were great.

I never use PAM. It has a propellant that doesnt seem to really clean off the pan after you are done with it.
