Great Potato Salad (or other fun salads) Recipe?
Anyone have one they swear by? Never made before but I would like to for this weekend!
Also looking for other big hit salad for BBQ!

there are two by Rachel Ray that I have made and everyone has liked, I'm on my way out otherwise I'd find and post the recipes
One is Non Potato salad (instead of potato you use gnocchi pasta)
and a Panzarella salad - bread, tomatoes, onions, (think bruschetta but the bread is in the bowl too)

I like to make a really chunky red potato salad. It is different then your average deli-style potato salad but it is always a big hit at parties.
5lbs red potato 6 eggs (harboiled) mayo vinegar parsley
-Boil potatoes with skin on until fork tender. Remove from water and let cool and "dry" off (i put thm on a big towel on the counter) -When potatoes are cool (they don't have to the totally cool, just not hot to the touch anymore) break them up. I use a big metal spoon and just break them up. Sprinkle with vinegar. I just eyeball it but I would say about 2-3 tablespoons. Mix very well. -Roughly chop the eggs in a small bowl and add to potatoes -Add mayo (again, i eyeball it but you need a decent amount - about 1 small jar) I usually add a few big spoonfuls and mix and keep doing that til it is the consistency I like. -If you refrigerate before serving, you will have to add more mayo. -Sprinle with parsely right before serving.

2 lbs of red potatoes, cooked and cut into chunks 1 envelope of Lipton Vegetable Soup Mix 1 cup mayo 2 teaspoons white vinegar 1/4 cup red onion chopped (optional)
Combine soup mix, mayo and vinegar in large bowl, add potatoes and onion, toss well.
Chill 2 hrs.

I make this recipe that I got from a Rachael Ray special every year. It's a big hit, because the roasted potatoes are so tender and carmelized.

i dont do measurements for my potato salad. i do it mostly by eye. i use aout a half off a 5 lb bag, maybe 2 big scoops of mayo ( its got to be Hellmanns for me) salt , pepper, diced onion i dont like a lot so i used about half of an onion, a little dash of vinegar, and maybe a teaspoon of mustard ofr if i want o give it a little kick i will use dijon mustard instead. Boil potatoes till fork goees through and potato is tender. let potatoes cool or run them under cold water, then peel the potatoes dice them and mix with ingredients . Store in fridge for at least 2 hours before serving. If the mood strikes also i will add two cut up hard boiled eggs, but not always YUM!

I dont do measurements either but mine is pretty basic with a lil kick
red potaoes, ( skin on) boiled red onions mayo bacon (chopped) lil dash vinegar lil squirt mustard CHUNKY blue cheese
mix it all um its so so good, the blue cheese gives it the umph,, :)

Not a salad but I usually bring a Watermelon Salsa to BBQ's and its always gone in minutes!

I don't have a recipe but I just got some potato salad from the deli next door to me and it was love at first bite. It had red potatoes with the skin attached, mayo, chopped up pieces of bacon, red onions and chives. I think that's it, of course salt and pepper too. It would have been even better if it had hard boiled egg in it.

It's not a potato salad it's a broccoli salad and it's delish
Mix Night Before 2 cups mayo 2 tbls wine vinegar ¾ cups sugar
Salad
2 heads broccoli 1 ½ lbs sharp cheddar 1 ½ lbs bacon fried & crumbled 2 small red onions
Mix together and serve

Taco Salad
1 lb ground beef Grated cheddar cheese (1 package) Lettuce – shredded – I don’t use that much just enough to add flavor 1 jar of salsa 1 bottle of Catalina dressing Tortilla chips
Do not mix the ingredients until you are at the event you are serving!
Brown ground beef and store in tupperware until ready to use.
In a large bowl, combine ground beef, cheese, lettuce and salsa.
Crumble tortilla chips while still in bag. Combine the tortilla chips to the ground beef mixture and then gradually add catalina dressing. When it’s reach a nice consistency, serve with chips or alone.

Watermelon Salsa
INGREDIENTS
2 cups seeded and coarsely chopped watermelon 2 tablespoons chopped onion 3 tablespoons seeded, chopped Anaheim chile ( I use a can of old el paso green chilies) 2 tablespoons balsamic vinegar 1/4 teaspoon garlic salt DIRECTIONS In a serving bowl, mix together the watermelon, onion, and chile pepper. Season with balsamic vinegar and garlic salt. Cover and refrigerate for at least one hour to blend flavors.
Serve with White corn Tortilla chips

This is almost the hellman's recipe but my mother has tweaked it over the years...you ladies are very special so here's mom's potato salad:
1/2 tsp celery seed 1 tsp salt/pepper 1/2 cup chopped onions 1/2 cup chopped onions 1 1/2 cups chopped celery 1/2 cup sweet pickle relish (i just use the juice actually) 4 hard cooked eggs diced 1 cup mayo 1 TB mustard 3 tb vinegar 2 tbs sour cream
Slice approx 5lbs of cooked and peeled potatoes (slice like potato chips but thicker). Add celery seed, salt, pepper, onions, celery, pickle juice, and eggs. Toss lightly
Blend mayo, mustard, sour cream and vinegar. Add to potatos. Cover and chill.
Tip: Sometimes I double the sauce recipe, boil elbow macaroni and make macaroni salad too!!!
Sometimes I just double the sacue recipe and make a more creamy potato salad
Sometimes I just lick the sauce bowl...
