I've made this a few times, it's always a big hit. I use less onions than the recipe calls for and I also use red onions

Potato Salad
Ingredients:
-4 pounds Idaho potatoes
-4 jumbo eggs, hard boiled
-2 1/2 cups mayonnaise
-4 green onions, finely chopped
-3 stalks celery, finely chopped
-1 tablespoon yellow mustard
-1/2 teaspoon freshly ground white pepper
-1 teaspoon kosher salt

Directions
- In a large pot, add potatoes and water to cover. Bring to a boil and cook until fork tender. Drain and cool.
- Peel cooked potatoes and cut into small chunks. Put in a very large serving bowl or container.
- Peel and finely chop hard boiled eggs and add to bowl.
-Add mayonnaise, green onions, celery, mustard, white pepper and salt. Mix until just combined. -Cover and chill in the refrigerator for 3 hours before serving.

I eye ball it, mainly but this is what we do:

5 pounds potatoes
6 hard boiled eggs
1 medium sized onion
2-3 stalks celery
2 to 2 1/2 cups miracle whip
1/4 yellow mustard
salt and pepper to taste
2 tsp white sugar

Of course boil the potatoes and eggs, let cool. Cut the potatoes into small cubes and dice the eggs, mix remaining ingredients and refrigerate overnight. My grandmother swears by the sugar!

I make a chunky red potato salad that everyone always wants me to make for BBQ's. I kinf of eyeball it but let see...

3 lbs red potatoes
4-5 hardboiled eggs
mayo
vinegar
parsely


Boil the potatoes with the skin on til soft (but not too soft, they should still be a little firm). Skins will start to crack and peel off in spots, its fine.

Take the potatoes out of the water and put on a big towel to dry. Once the potatoes are dry (they will still be warm, but not soaking wet anymore)

Put them in a alrge bowl with the eggs and give everything a really rough chop. I leave it pretty chunky. Drizzle a little bit (maybe 2 tablespoons) of vinegar and mix well. Add the mayo--it needs a lot because the potatoes soak it up, so I just put a few cups in and mix and go from there. Sprinkle with parsley before serving! (if you refrigerate it, before serving you might need to add some more mayo -- just check it)

This recipe is soooo easy and everyone loves it.

15 Red Potatoes, boiled until fork tender and cut into round circles
2 Scallions (green onions), chopped
5 Eggs, Hard Boiled, chopped
Mayonaisse
Salt & Pepper

This is my FAVORITE potato salad ever.

you know which recipe is awesome? the one on the hellman's jar!

I follow it almost exactly... but I don't peel the potatos, and I add a little extra onion, celery, and egg.

also, I memorized that recipe years ago, so I don't remember how specific they were about the type of potato... but at any rate, you always want waxy potatoes (like red potato)... never use a fluffy baking potato... you'll end up with mashed potato salad.

I so agree with this. I love that recipe and use it all the time. I tweek it to taste, but oh, so good.

This is almost the hellman's recipe but my mother has tweaked it over the years...you ladies are very special so here's mom's potato salad:

1/2 tsp celery seed
1 tsp salt/pepper
1/2 cup chopped onions
1/2 cup chopped onions
1 1/2 cups chopped celery
1/2 cup sweet pickle relish (i just use the juice actually)
4 hard cooked eggs diced
1 cup mayo
1 TB mustard
3 tb vinegar
2 tbs sour cream

Slice approx 5lbs of cooked and peeled potatoes (slice like potato chips but thicker). Add celery seed, salt, pepper, onions, celery, pickle juice, and eggs. Toss lightly

Blend mayo, mustard, sour cream and vinegar. Add to potatos. Cover and chill.

Tip: Sometimes I double the sauce recipe, boil elbow macaroni and make macaroni salad too!!!

Sometimes I just double the sacue recipe and make a more creamy potato salad

We make the potato salad without mayo, its yummy..

potato's
carrots diced
celery diced
red onion diced/sliced
black olives
chick peas

mix with evvo & balsamic vingear ,,


or Potato & Stringbean salad

red potato's
strng beans
mix with garlic lil red onion evvo & organo ,,

I like the string bean one best
