Help planning a BBQ-4th of July
My Dad has this tradition of having a huge 4th of July party/BBQ every year. He invites everyone he's ever known, and it lasts from about 2 pm-10pm (so lunch plus dinner are usally provided). He had heart surgery today so I doubt he'll be up for the work required and I'm going to help do it.
I need help planning this thing. Most of the stuff he usually does is too involved (chicken shrimp and steak kabobs, etc.)
So this was my plan and I need critique of my menu so far. I was planning on doing separate meals for lunch or dinner. He has a smoker and a grill, so I was thinking of doing meats that can be shredded in the smoker the day before, seasoning w/whatever sauce, and serving in trays w/rolls.
There are a few close friiends that are bringing extra sides and are covering all dessert, but I'm not sure what they're bringing yet.
Lunch: Burgers Hot dogs Grilled chicken Macaroni and cheese Pasta salad Roasted corn
Dinner: Brisket Pulled pork Shrimp kabobs Ribs Pasta salad Macaroni salad Mac+cheese Bruschetta salad Grilled veggies Roasted corn

Looks like a great menu! Only thing I might add is some kind of chicken/poultry for dinner for the non beef/pork eaters. Maybe chicken wings? Prayers for a speedy recovery for your dad.

Sounds great! I think the only thing I would change is on the dinner menu, I feel like you don't need both mac and cheese AND macaroni salad. Especially since you are having a pasta salad. Maybe swap the mac salad for coleslaw?

Oh good idea! Then people can put coleslaw on their pulled pork. I was thinking maybe cornbread too?
I am adding a buffalo chicken burger and chicken ranch burgers to the dinner menu for the non-meat eaters (thanks for the suggestion!)
