Re: help with christmas eve and christmas day menu, please
Sounds perfect to me. I think you said you have teenagers staying, right? I think I would add one small item ...
Non-alcoholic (of course) mocktails as a treat ....
For example, with your Christmas Day menu:
Cinnamoncranberry Iced Tea:
- 1/2 cup cinnamon flavored herb tea - 1/4 cup cranberry juice - 1/2 cup pineapple juice - ice cubes - sugar to taste
Mix the tea and juices together and pour over ice in a tall glass. Add sugar and garnish with a cinnamon stick.
for the Eve, Maybe a minty-lime seltzer spritzer with marachino garnish (I am sure google can help you...)

Re: help with christmas eve and christmas day menu, please
Looks great, only thing I might add is some kind of bread/muffin/bagel thing to the Christmas Eve breakfast to go with the casserole.

Re: help with christmas eve and christmas day menu, please
Yummy, pernil!!! My one suggestion is that instead of white rice and black beans, you make arroz con gandules, super yummy with perniil. Or, make a combo rice and black beans dish vs having the rice and beans separate - the white rice seems to plain. But this is just me. Also, you might want to add a type of "pico de gallo" (i don't know what else to call it: it's tomato, cilantro, red onion, lemon juice, salt, and maybe a touch of olive oil.
I'd love to be a guest at your house, sounds great!

you're right on the rice/bean mixture (moro), i'm just not very good at making it. my moro always comes out too dry... i thought i'd make them separate to ensure i don't screw it up
