Here is the scenario...what would be on your table?
it's just you, your dh, and your newly born babe at your beautiful home in the country on Christmas Eve. since you are basically just cooking for 2, you have a lot of leeway in terms of budget and time.
what would be on your table?
eta: this scenario is now just a dream for me too...we are doing the family hoping thing down here. going up to the house on Saturday. *lesigh*

this thread gave me the goosebumps! what a beautiful scenario! the location, the no shuffling from parents house to in laws house, the endless menu options??! what a perfect Christmas!
ok, i need to think about the menu!
appetizer: TBA
main entree: breadcrumb crusted prime rib green beans popovers or yorkshire pudding some sort of potato gratin
salad: mixed greens with walnuts, pears, cranberry, and some blue cheese crumbles

French Onion Soup (au gratin of course) Chateaubriand with a red wine reduction Scalloped Potatoes Roasted Brussel Sprouts or Broccoli Simple Salad with French Vinaigrette
Dessert? Chocolate Fondue with Fruits. breads and pretzels for dipping.
And Champagne.

my favorite "snowed in" meal
clam chowder filet mignon and a lobster tail balsamic asparagus and simple mashed potatoes salad with oil and vinegar garlic bread
dessert: molten chocolate cake
ok i have never actually made the lobster tail or the cake, but you are more advanced!
enjoy every moment! My favorite part of the holidays is Christmas day, just me and DH until about 5PM when we go out to his aunt's house. We make a ridiculous breakfast and eat it all day and watch Christmas movies!

DH and I love to cook together so we would probably try to make something we have never made.
I would definitely have a macaroni dish, bc I have to have one at Christmas...maybe manicotti.
For a main I think we would try to make Beef Wellington...DH loves it and we have never made it.
Salad would probably be simple with some grated Pecorino, some tomatoes, cucumbers, olives, onions...oil and vinegar.
Veggie...sauteed escarole
Dessert would be Creme Brulee my favorite.
Oh and we would start with Champagne a rose..and switch to Ruffino Ducale
yum!

We usually celebrate Christmas Eve alone & make a cheese fondue, but DH works during the day & we have a bigger Chrsitmas Day dinner with family, so we keep it simple.

This sounds perfect. The only thing I would add is a nice cheese, some crusty bread and wine to start things off. Roasted brussell sprouts are absolutely amazing and really easy.

you guys are funny!!! but thank you...though I am a slouch compared to some of the other ladies on this board!!!!!
your menus sound DELICIOUS.
my one problem is I can't have cheese...that is my good mommy gift to my little...also anything scalloped is out *le sigh*
having fried shrimp on Christmas Eve is a tradition, so I may do that for an hors d'oeuvres with some antipasti.
still thinking....ugh. I miss dairy!
I make great roasted brussel sprouts with pancetta. last year I made rack of lamb.
Pan-seared filet mignon with cabernet sauce mushroom risotto roasted brussel sprouts with pancetta Hunnybunny's salad...sans the cheese for me ( )
something for dessert......

Baked brie Baby Greens with goat cheese, candied pecans & warm bosc pears (or granny apples) Beef Tenderloin with a Port wine reduction Corn casserole (we just love it too much, even if it doesn't go) Mashed potatoes with shallots. Ny style cheese cake with strawberry reduction or Pannetone with hot chocolate for dipping

If no dairy what about stuffed lobster tails? Or rack of lamb with cherry sauce, cornish hen with butter apricot glaze? ?Yum.
Here is a dairy free mashed taters idea I eyeball it so sorry i dont have the measurments.
new red potatoes fresh parsley - chopped fine greek olives with out pits - halved good extra virgin olive oil kosher salt black pepper
boil new red potatoes until fork tender while they are still hot mix with the olives and some of the olive oil then I "smash" everything together with a fork - add extra olive oil, parsley salt and pepper to taste.
