Hofstra... thank you for the cheesecake recipe
let me begin with... i haven't eaten it, yet... but i licked the bowl. yum.
yesterday, i was asked to make a cheesecake for work. that means, i have to make TWO cheesecakes because i live with a 50-year-old toddler who will start whining about why i'm baking for someone else and not for him. yes, that is the person i live with.
i went to hofstra's FB page and asked for a recipe. i hadn't made a cheesecake in a million years and i didn't currently have a go-to recipe.
i'm so happy i did!!!!
i made two cheesecakes. my oven heats a little un-evenly, so one was slightly over cooked and it cracked in the cooling process... that's the one that stayed home lol
i licked the spatula, i licked the attachment on my kitchenaid, i licked the bowl. yes, i got a tummy ache from all the raw batter, but i don't care. it was amazing.
i can't wait for the birthday girl coworker to show up so i can have a legit slice with a cup of coffee after lunch. but if the batter is any indication of how good the cooked product will be... this is AMAZING and is now my go-to cheesecake recipe FOR EVER!!!
ps. i started it a little late in the evening, so i stayed up way past my bedtime. i'm running on very little sleep... that's why i don't have the brain capacity to post pictures. but you can find them on her FB page

SO worth the tummy ache!! LOL
Glad you loved the recipe, like I mentioned, it's the ONLY cheesecake recipe I make. It's so perfect and so dense which I love.
How did everyone at your job like it?

Glad you loved the recipe, like I mentioned, it's the ONLY cheesecake recipe I make. It's so perfect and so dense which I love.

either i'm stalking you or you're stalking me. i notice you just posted this and i was just coming over to give an update.
holy fukk! it is amazing!!!
my coworkers were chomping at the bit wanting to cut into it. the birthday coworkers (there ended up being two of them) got the first two slices and they each ate their slice while standing there. they didn't even wait to go back to their desk. another coworker is a big baker and she said that she has now decided that there is no reason for her to ever learn how to make a cheesecake because i can just make them all for her.
i finally cut myself a tiny, tiny slice. trying to counter all the batter i ate last night lol.
oh my goodness. it was delicious! that graham cracker crust was perfection. the vanilla graham crackers combined with the brown sugar gave it an almost caramel flavor... holy cow. i can eat that alone for the rest of my life. you'll have to roll me down the street!
thank you AGAIN for sharing such an amazing combination of recipes.
please now that as far as my coworkers and family is concerned, i had a dream and an angel brought me the recipe. i will go down taking credit for this. plagiary is now my middle name!

I'm so glad you and everyone else loved it. I told you, it's the best!! Whenever I make it I end up eating it for breakfast, lunch and dinner. LOLOL Try the ganache one time too, it's like next level awesome.

one of the dearest people in my life (a cousin) LOVES cheesecake.
i sent her a picture of it and told her that i'll make it for her birthday. she just about exploded with joy lol
