Homemade Mac& Cheese Recipe?
Does anyone have a super yummy homemade mac & cheese recipe???

I make a Bechamel sauce first (butter and flour wisked together until thick and smooth and bubbling hot. Add milk or light cream until smooth and the consistancy of a thin sauce).
Once the sauce is made I add 2 tsp of pepper, a tablespoon of hot sauce, 1 cup of Gruyere and 1 cup of mild cheddar. Wisk until smooth. Add milk to thin if it it too thick. Add salt to taste.
I pour this over my pasta and then add warm crumbled pancetta and stir it all up.
For the topping I melt 2-3 Tbsp of butter and pour it over about a cup and a half of Panko. Mix well and spread over the mac and cheese. Add a few sprinkles of pancetta to the top and a sprinkle of the gruyere. Broil to get the top just a bit golden and serve IMMEDIATELY.

Velveeta Down Home Mac & Cheese
1/4 cup (1/2 stick) butter or margarine, divided 1/4 cup flour 1 cup milk 1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes 2 cups elbow macaroni, cooked, drained 1/2 cup KRAFT Shredded Cheddar Cheese 1/4 cup crushed RITZ Crackers
PREHEAT oven to 350°F. Melt 3 Tbsp. of the butter in medium saucepan on low heat. Add flour; mix well. Cook 2 min., stirring constantly. Gradually add milk, stirring until well blended. Cook on medium heat until mixture boils and thickens, stirring constantly. Add VELVEETA; cook until melted, stirring frequently. Add macaroni; mix lightly. SPOON into lightly greased 2-qt. casserole dish; sprinkle with shredded cheese. Melt remaining 1 Tbsp. butter; toss with cracker crumbs. Sprinkle over casserole. BAKE 20 min. or until heated through.

This is "Chucks Favorite Mac and Cheese" from Allrecipes.com. It's a HUGE hit everytime I make it. Nice and tangy and creamy. I usually put the cottage cheese through the food processor to smooth out the texture.
INGREDIENTS 1 (8 ounce) package elbow macaroni 1 (8 ounce) package shredded sharp Cheddar cheese 1 (12 ounce) container small curd cottage cheese 1 (8 ounce) container sour cream 1/4 cup grated Parmesan cheese salt and pepper to taste 1 cup dry bread crumbs 1/4 cup butter, melted
DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil, add pasta, and cook until done; drain. In 9x13 inch baking dish, stir together macaroni, shredded Cheddar cheese, cottage cheese, sour cream, Parmesan cheese, salt and pepper. In a small bowl, mix together bread crumbs and melted butter. Sprinkle topping over macaroni mixture. Bake 30 to 35 minutes, or until top is golden.
ETA: I dont do the whole bread crumb thing...

Macaroni & Chese
1 box of Elbow macaroni 1 package of Velvetta cheese 1 ½ cups of milk (if sauce is think, add more milk)
Cook pasta according to box. While pasta is cooking, cut velvetta into chunks. Drain pasta and put back into pot. Turn flame on low and add velvetta and milk. Stir until cheese is melted.

THis is very close to what I make, except I use only cheddar (maybe I'll try gruyere, sounds yummy) and instead of butter/panko mix, I shake breadcrumbs accross the top before baking....
