Honey Crusted Pecan Chicken (WW)
Found this recipe online and was wondering if anyone has ever made it...I was thinking of trying it...
Honey Crusted Pecan Chicken 1/4 teaspoon salt
1/4 teaspoon pepper
4 6 ounce chicken breast halves - skinned
8 4 ounce chicken drumsticks - skinned
1/4 cup honey
2 tablespoons Dijon mustard
3/4 teaspoon paprika
1/8 teaspoon garlic powder
1 1/4 cups cornflakes, finely crushed - (4 cups uncrushed)
1/2 cup pecans - finely chopped
cooking spray
Preheat oven to 400° F.
Sprinkle salt and pepper evenly over chicken; set aside. Combine honey, mustard, paprika, and garlic powder in a small bowl; stir well. Combine Cornflakes and pecans in a shallow dish; stir well. Brush both sides of chicken with honey mixture; dredge in Cornflake mixture.
Place chicken pieces on a large baking sheet coated with cooking spray. Lightly coat chicken with cooking spray, and bake at 400 for 40 minutes or until done.
NOTES : Serves 8

Sounds good, but if that serves 8, you mean you get a 1/2 breast and 1 drumstick? I'm not on WW, but it's 7.5pts a lot for 1 thing...I'd still be hungry.

I was going to take out the drumsticks and put more cutlets in the recipes - not sure what the points would work out to. I'm trying to find some low fat recipes, and this came along in my search - it doesn't necessarily have to be WW.
