Horrible cook needs easy dinner recipe
DH is working today and I told him I'd make dinner. He said, "Oh great, english muffin pizzas or a frozen Trader Joe's dinner."
I'd like to surprise him by cooking something edible. We're not really healthy eaters, red meat is fine. Just no seafood. I need something easy, that I can't burn.
Help!

Do you have a grill pan?
The simplest thing is chicken breast (seasoned) grilled, steamed veggies and pasta or rice.
Lots of variations on this.
Also, buy the already cooked chicken breast or a rotisserie chicken, cut it up and make soft tacos with the fixings. Buy the guac.
You would just have to cut up tomatoes and lettuce. Buy cheese shredded, sour cream..etc. Whatever you like on your tacos. The soft taco shells heat up nicely on one minute in the microwave.

if you are worried about burning meat, I'd avoid doing anything where it is time sensitive.
Taco Meat and Taco toppings are easy.
You said you do not eat healthy. My favorite items are these and you can kind of make it into a pub night theme or something... buffalo chicken wing dip!! you take a rottisserie chicken and shred it up and mix it with hot sauce (about half a cup) chunky blue cheese dressing (about a cup) 1 bar of cream cheese and 1 bag of shredded mexican cheese blend. You mix this all together and then put it in a casserole dish and bake at 350 until bubbly (about half hour but depends). You can serve this with chips to dip into it. or you can even put this spread on hamburger rolls and make sandwiches out of it. its so delicious you can make guacamole or salad to go alongside of it.
you can also do gourmet sandwiches. Buy everything he'd like on it and just assemble it yourself. then make an easy side dish like a coleslaw or pasta salad.

This is one of my favorite go-to recipes, it's super easy and really quick:
Ravioli with Balsamic Brown Butter
1 package cheese ravioli 6 Tbsp of unsalted butter 2 Tbsp of balsamic vinegar salt pepper parmesan cheese
1. Boil the ravioli according to the package directions.
2. While the ravioli are boiling, melt the butter in a skillet, once it's melted leave it in the pan for a few minutes until it starts to turn a nice dark brown color. Be careful not to leave it on too long or it can burn - probably about 5-6 minutes or so. Once the butter has browned, take it off the heat and let it sit for one minute. Stir in the balsamic vinegar and add the salt and pepper to taste.
3. Once the ravioli are done boiling, add to the browned butter sauce and toss to coat.
4. Pour into bowls and top with parmesan cheese!
It's so delicious!!! You can even serve it with a nice crusty bread.

I usually poach/boil my chicken so it doesn't burn.
Chicken, Broccoli and cheese
1 pound cooked chicken 1 bag broccoli florets 1 jar double cheddar sauce (near pasta sauces/Ragu) Breadcrumbs
Add cooked, bite sized chicken to the bottom of a casserole dish
Top w/ bag of broccoli florets
Top w/ cheese sauce
Top w/ breadcrumbs
Bake at 350 until heated thru - maybe 20 minutes.
------------------------------------------------------------------------ For the chicken, I cut into bite sized pieces. Add to about 2 inches of boiling water in a flat saute pan (large /deep omlet) Season water w/ garlic salt, onion powder, italian seasoning, hot sauce, paprika, black pepper, or whatever you have. When the chix is cooked thru, just drain. Its moist and can't burn unless all the water evaporates ------------------------------------------------------------------------

Double Cheddar
My 3 year old son made this. He even cut the chicken. The only thing he didn't do was stir the chicken and put it in the oven! I hope you try it, its simple and tasty.

These is a recipe I usually eyeball, so if it looks like it needs more cheese or mayo, just add it. I serve this with buttered long grain rice.
Baked Chicken/Broccoli?Cheese
1 lb boneless skinless chicken breast 10 ounces broccoli florets 1 cup mayo 1 cup sharp cheddar cheese 1 can cream of chicken soup 2 cups plain Kellogs Corn Flakes
Preheat oven to 375.
1- Place broccoli in ungreased baking dish. Lay chicken breasts over the broccoli. 2-In a medium bowl, mix mayo, soup, and cheese until blended well. Pour over chicken. Add more cheese if needed (you want it to be really cheesy) 3- Cover and bake for about 45 minutes. 4- At 45 minutes, remove aluminum foil and sprinkle corn flakes over dish. Put back in oven an bake another 15 minutes.
