EASY, yummy dinner recipe for new years eve?
I am looking for an easy but nice recipe to cook for me and DH for new years eve.
I am a TERRIBLE cook - seriously, the worst. I can hardly sautee chicken. I do best with things I prepare and then just have to be baked - lol. Also, I am not great at preparing things that are too tricky, cause I have a one year old to keep an eye on while trying to cook.
Some people have mentioned using a slow cooker, but I dno't have one.
Any ideas? TIA!!!!!!!

hmm not sure how fancy you want to go, but one easy easy thing i love making is chicken parm. i just bake chicken breasts (just pop 'em in the oven). when they're baked through, put them in a baking dish. if you don't have a baking dish then i'd just place them on foil and fold the ends up to catch running sauce.
put fresh mozzarella and sauce on top of the chicken and bake further until the cheese is melted.
While the chicken is baking, cook up plain pasta. Then put the sauce and chicken on top. Maybe buy a bag of mesculin greens salad at the store and add whatever you want - tomato, carrot, cucumbers. drizzle with olive oil and balsamic vinegar.
I like to look on allrecipes.com for recipes. they have a lot of easy ones on there. Good luck!! :D
ETA: I don't bread the chicken, just bake it naked :)

I second PP about allrecipes.com, you can do a search for easy NYE menu, etc.
We are having kielbasa, potatoes and onions with a honey mustard glaze. It is not fancy, but it is good, hearty food that you literally can't screw up. DH loves it and so does anyone else who tries it.
