I taught myself on my train rides home.
I'm not sure what you're trying to do - edit photos or make invites.
If you search for digital scrapbooking or photoshop tutorials, there are a ton out there. ALso iTunes has a free podcast of them.

College PS for dummies believe it or not is incredibly helpful. It was actually the only book on our recommended reading for my classes.

Re: how did you learn to use photoshop?!
I bought The Missing Manual. I sat in Borders for like 2 hours looking through the books they had there trying to figure out which one was the easiest to understand, had the most info for the money and had the things in it was most interested in doing. I used the book to get started and make DSs invite for his 1st bday, the labels for his favors, and modify pictures for the scrapbook. The Missing Manual has been perfect.
ETA This was the invite. It took a bit to make cause it was the first thing I did, but I was soooo happy and everything after this has only taken me like 15min to do, at most.

I am the same way...I have Photoshop Elements 3.0 and can't really create an invite. I can edit a picture and that's about it.

Re: how did you learn to use photoshop?!
I took a class in College, I worked with it at my first temp job, and the rest I taught myself - through reading online, tutorials, and I have a Scott Kelby book on the way.
It IS a very involved program - you can do so much with it... definitely not the type of program you learn overnight so give yourself some time.
As for pointers - all depends what you are looking to do! As a general pointer I would say learn your keyboard shortcuts - they are huge timesavers! (For example, b for brush, x to switch your background and foreground colors, d to set your colors to default, [ and ] to change brush size, etc)
