How do you fry your chicken cutlets?
Egg/breadcrumbs? Buttermilk/Flour? Something else?
I usually do egg/breadcrumbs but I made Irish Soda Bread yesterday and had DH get the buttermilk, so of course he brought back a ridiculous amount. So I decided to fry the cutlets by dipping in seasoned flour/buttermilk/seasoned flour again. And you know, I think I might like it better! What do you guys use?

I used egg and breadcrumbs. i usually mock fry them in the oven by spraying them with Pam then baking. They come out with a beautiful crust on them and nice and juicy!

I dip them in ("seasoned") e egg and milk , and then dip them in breadcrumbs. I fry them in olive oil.

Re: How do you fry your chicken cutlets?
I take plain breadcrumbs, add salt, pepper and grated parmiggiano reggiano cheese to the breadcrumb mixture. Dip my chicken cutlets in an egg wash, then the breadcrumb mixture, then fry in a cast iron pan (only cast iron for me) in vegetable oil.
I then drain them on a cookie cooling rack, not on paper towel,so they don't hold the oil next to them and stay nice and crispy! Love them!
I really find the cast iron makes a better fried cutlet or meatball.

Re: How do you fry your chicken cutlets?
When I want full flavor I dip in egg and breadcrumbs (cut with flour); when I'm feeling a little bit more healthy, I use fat free mayo and then dip in breadcrumbs....I usually bake my chicken cutlets this way too.

Re: How do you fry your chicken cutlets?
Last week I tried Rachel Ray's pretzel crusted chicken.. delicious. In a nutshell, you are using crushed pretzels instead of breadcrumbs and it was GREAT!

i agree cast iron is the best pan, and it is actually easy to clean, soak it in some water and it wipes off, don't really use soap you want the pan to soak up all that is cooked it in

Re: How do you fry your chicken cutlets?
Flour (helps the egg and breadcrumbs stick better) Egg Breadcrumbs (italian with added cheese)
Fry on medium/high heat. If they are thick i will finish them in the oven.

Re: How do you fry your chicken cutlets?
I put olive oil, a little bit of water and minced garlic in a bowl.. then bread them with bread crumbs and parmegian cheese.. and just bake in the oven.. they come out delicious.
