How do you make your stuffing?

I've seen it made with rice and without rice.

thank you, I have such picky eater (my dad) who hates when something different is made

i make it with no rice. only in the past 2 years have i started adding sausage. everyone raves about the stuffing. i do bread crumbs, sausage, mushrooms, carrots and celery.

How do you make your stuffing?

My mom always did a sausage bread stuffing, my mil does a sausage mushroom rice stuffing. I now make my mom's. No amounts, sorry.... I have no idea.

Here's the gist:
I sweat down superfine diced onions and celery in butter for a short time. Add parsley and mushrooms, cook 5 minutes, then add crumbled italian sweet sausage with no fennel. Deglaze with white wine when the sausage is browned, scraping the bottom. Boil off the alcohol, reduce heat to low. Add low sodium broth and water, simmer. I then add a bag of seasoned bread cubes and 1 bag of cornbread cubes. I add water or broth as needed shut off the heat, cover and let it sit. We always stuff the bird (sorry) and bake some on the side covered with foil.

I make 2 types usually. A sausage stuffing with bread and onions and crumbled breakfast sausage and then I make a "harvest stuffing" on the side where I start with box stuffing base (usually stove-top) and add apples, celery, nuts, dried cranberries and usually use some of the turkey drippings to moisten it and then bake it so it gets a little crunchy on top. It's very simple and VERY tasty!

I've had rice-based stuffing before and its just not my thing.

1 large onion diced
3 stalks celery diced
1 14 oz pkg stuffing
1 ts poultry seasoning
2 1/2 cups chicken broth, low sodium
1/2 cup melted butter
1/2 tsp sage
1 8 oz package mushrooms, sliced
3 carrots diced

In pan cook crumbled sausage, onion, celery, mushrooms and carrots until sausage is brown. Butter a 9x13 pan. Put cubed stuffing in pan. Pour sausage in and sprinkle with poultry seasoning. Pour broth and butter over and toss. Cover and bake at 350 for 45 minutes. I prepare ahead of time, usually day before and only pour a small amount of broth over. On thanksgiving, I take it out and let it sit to room temperature. I pour more broth over stuffing and cook.
