I pack during the week before we leave so that the night before I just have to close up the suitcase and go the next morning!

I start the week before, so I have time for laundry if necessary, and to buy whatever I might need for toiletries.

It depends -- if I am going someplace with the same weather we have here, I pack the night before. If I need summer clothes in the winter time, I'll pack a week or so in advance.
