well, they get bitter when they sprout. The green part is fairly bitter.
they also shrivel / dry-up and get brown when they're way gone

I use my garlic till it starts to "grow". And then if I'm really desperate I cut around the growing green part. My mom bought me a ceramic garlic keeper and my garlic lasts weeks now
