How to make juicy chicken breast and soft (not soggy) broccoli?

Help me out here ladies. What's the trick to making JUICY chicken breasts? Or soft broccoli that ISN'T soggy? We are happy with the way we season our chicken breast, tastes good, but the outside is sometimes hard and the inside isn't very juicy. Our broccoli is always on the soggy side.

Steam the brocolli and bake the chicken for 20 mins then check the breast...the juices should run clear when the meat is cut into.

When I bake my cutlets on my pizza stone, they are incredibly juicy. Steaming the broccoli for a few minutes will make it crisp tender.

I boil my broccoli for no more than 5 min, then I saute with garlic and oil for 5 min.

Are you cooking the chicken in the oven, on the grill or on the stove?

I buy chicken breasts on the bone, they are much juicer than boneless.

My mom sometimes wraps them in alluminum foil and bakes them - they steam.

broccoli-

heat salted water until boiling. Cook broccoli for no more than TWO minutes. Otherwisse it is mush.

Strain and toss with garlic salt, olive oil and some hot pepper flakes

chicken -

i buy the bigger chicken breats (not thin cut)..then i spread olive oil on both sides and season heavily.

I preheat my toaster oven on the broil setting and broil on there 10 mins per side to where they are almost done but not fully done. (this time is for the big pieces not for thin cut)

Then I set them out on the counter covered in foil to sit for a few mins. The chicken keeps on cooking in there and the juices permeate the meat.

Cut it.. and the inside should be all white and jiucy.

The trick is to know when tio take the chicken out..juuuust when its almost done..when the inside is a slight slight twinge of pink. That is when it should come out to sit for a few minutes.

My husband always sears the chicken first, then bake. You get a nice crispy outside and juicy inside. He uses a cast iron grill pan-definitely worth the invesment.

I bought one of those Purdue chickens you cook in the bag recently (I know...Chat Icon Chat Icon ) because I was cooking for a group and was petrified of drying out the meat. Well one of the guests send it was the most tender chicken she has ever had! They sell them with just breasts too. I am sure the aluminum foil method mentioned above too would work just as well.

Ah, this is very interesting about cooking the chicken in the toaster on broil! I have to try that.

So you take it out at about 10 minutes, then wrap the whole breast in foil?

We usually bake it in the oven, but I think we've been overcooking it based on all of these posts Chat Icon We usually cook it for like 40 minutes (we got that # from how long we cook chicken legs on the bone in the oven).

And the broccoli we usually get frozen and we steam for 10-15 minutes. Too long, huh?

A few people have now told me to try boiling for 2 minutes then sauteeing in garlic and oil. Must try this!

brine and pound your skinless boneless chicken breast and they will come out perfect everytime.

I use four cups of water and 3 TBsps of salt. (that is good for 4-6 breasts) I leave it in the fridge for an hour. It makes such a difference.

When you master that you can add in other flavors. I sometimes throw in a touch of hot sauce and white wine to add flavor.
