How to make thick Shell Steaks without a grill??

I bought these really thick shell steaks and I want to make them tonight but we don't have a grill yet, and they are way to big for the george foreman grill.

How can I make them in the oven?? Help!!

You can broil them in the oven or if you have a grill pan or a griddle you can make them on the stove top.

IMO they come out better on the stove top.

This might be a stupid question but do you use the broiler part of the oven...like the part that has the little tray on the bottom...

or actually use the oven and put it on a cookie sheet or pan?

I'm so clueless!

Re: How to make thick Shell Steaks without a grill??

You can do either!

Don't feel stupid...I had no idea had to cook a steak using the oven until a month or so ago and I had to ask my dad Chat Icon

The broil pan has the slots so the juices will fall through. If you use a cookie sheet then try to use a rack with the cookie sheet.

Also, broiling is quick so you want to make sure to keep an eye on the steaks and flip them once through the cook cycle.

ETA: I am not sure about the broiler part of the oven. I used the actual oven and set it to broil and put the top rack close to the top of the oven and put the pan on that rack.

Just wanted to add ....(since I learned the hard way Chat Icon )

In my oven, when we broil you have to keep the oven door slightly open otherwise it smokes like crazy...Not sure if thats all ovens or if its just a feature on mine...We read it in the oven manual after the fact Chat Icon

Do you have an electric or gas stove?

Electric - Set to broil and put steaks on a broil pan and crack the oven (this is the way I usd to do it --have had gas for a long time now.

Gas - yes, use the bottom (although I understand that the new gas stoves you do not have to do this).

Technically, when you set your stove to broil, only the top heating elements work. A good example is a toaster oven. If you put a piece of bread in a toaster oven and set it to broil, only the top of your bread will get toasted. This is why when broilling you have to flip your food over. HTH

I have gas. Not too new of a stove. It goes on top.

I've even seen some stoves with the broiler in the drawer part. Chat Icon That was weird to me.

I hate having to get on the floor to make steaks so either I have DH do it or I use the toaster ovenChat Icon

Re: How to make thick Shell Steaks without a grill??

The very best way to make a perfect shell steak is as follows:
buy a meat thermometer, nothing fancy just one that stick in the meat with a dial on top.
Place your steaks out on the counter 20 minutes before cooking them. This gives them some time to shed refrigerator temperatures and come closer to room temperature. (Don’t worry, we’re cooking them on 500 degrees for sufficient time to kill any bacteria.)
Place a skillet in the oven and preheat to 500 degrees. When the oven reaches 500 degrees, leave it for about 10 minutes. This lets the skillet really soak in the heat.
Remove the skillet to the stove top on high heat. Sear the steaks for 30 seconds on each side. This creates a brown crust.
Move the steaks (pan and all) into the 500 degree oven. Roast for 2 minutes. Set a timer. This is an exact science.
After 2 minutes, flip the steaks, and roast for 2 more minutes.
Remove from the oven, cover the pan with foil for 2 minutes. The steaks continue to cook, but come to a rolling stop on rising temperature.
Serve with the very littlest pat of butter on the top of each.
This cooks the steaks to a perfect medium rare assuming that you have a steak that is 1 to 1 1/2 inches thick.

like a restaurant. DH Likes it with a Port reduction.

My DH starts it in our cast iron skillet, then adds a bit of butter to the top and finishes cooking in the reg. oven on 450-500. Done in 5-6 minutes and it always comes out great, so he says. I'm not a steak person lol

Same here. Comes out great every time. Sometimes I prefer this to grilling.
