I usually throw some chicken into it so that there is a protein. I don't really serve a side since the rice is already a lot of starch, but you could do green beans maybe or roasted asparagus.

I order mushroom risotto all the time when Im out to eat
also love a shrimp or scallop risotto
Im too scared to make it myself though
