I have thick boneless pork loin chops...how to cook w/o drying them out?
I would say they're about 2 inches thick each. I have no clue how to cook them but I was thinking on a stovetop covered for a while simmering in some sort of liquid so they dont dry out. I dont want to make them in bbq sauce. I was thinking something lighter. I also have an onion but not sure if I should incoroporate that into cooking them. Help?

raken 40 posted this recipes a few days ago:
4 boneless pork chops 4 potatoes, cut small 1/2 cup roasted red peppers,chopped up 1 onion,sliced 1 cup chicken broth 1 tsp. oregano
season the pork chops with salt & pepper and brown in olive oil for about 10 minutes. Remove and transfer to plate. In the same pan, put in your potatoes,onions and oregano, cook for about 5-10 minutes til potatoes turn a little brown, then add your broth,peppers and pork chops and let it come to a boil. Cover and turn heat to low for 10 minutes..
I think it loos delish and plan on making it for DH later this week. There were some other recipes in the same thread

I made these the other night.
dredge in flour, egg and italian breadcrumbs with grated romano cheese. Season the flour and egg before dredging.
Fry them for a few minutes on each side until golden in olive oil and lite butter. (I use land o lakes light butter with canola oil)
Transfer to glass oven safe dish and bake for about 20 minutes at 425.
Frying them first will seal the juices in.
I made noodles and peas to go with it.

I egg them and bread in corn flake crumbs, then put duck sauce( Liberally) on top , bake till cooked thru. We have it w / rice and a salad.
