I made yummy vegetable bean soup...
Here's what I used...
2 boxes of organic chicken broth
then filled the two boxes with water and used that.
2 cans of peeled tomatoes in their juice
1 large onion chopped
4 large cloves of garlic chopped
handful of fresh parsley chopped
teaspoon of oregano
teaspoon of pepper
dash of salt
One can of kidney beans
One can of cannelini beans
Bag of frozen string beans
Bag of baby carrots chopped
Two large green zucchini diced
Two large yellow zucchini diced
One large potato diced.
Made small macaroni on the side... it was soo delicious!

Maybe I will make that this weekend...
I still have a huge pot of chicken soup that I made on sunday
and the Chili I made last night
