Re: I need a Fabulous Pasta Salad Recipe (no mayo)
my mom used to make one with those packets of salad dressing mix, that you would add oil vinegar and water too. If you know what i am talking about....
I can't think of the name.
But if you cant find that i would just do pasta, peppers, broccoli (other veggies) and mix it with italian dressing.
This is a good one from whole foods...it's made w/brown rice, not pasta.. Also try their website they had a ton of receipes.
Brown Rice al Fresco Salad Dairy-Free, Gluten-Free, Vegetarian
Crisp carrots, cucumber, radishes and celery combine with fresh basil, mint and parsley in this honey-Dijon dressed rice salad. Served chilled or at room temperature, this versatile dish is perfect for al fresco dining alongside your choice of protein.
Serves 6 2 1/2 cups long-grained brown rice, cooked 1/2 cup carrots, diced 1/2 cup seedless cucumber, diced 1/2 cup (around 5 to 6 medium) radishes, diced 1/2 cup celery, diced 1/2 cup red onion, diced 1 tablespoon garlic, minced 1 cup frozen peas 1/4 cup fresh basil leaves, torn into 1/2 inch pieces 1/4 cup fresh mint leaves, chopped 1/4 cup Italian parsley, chopped
Vinaigrette:
1 tablespoon honey 2 tablespoons extra virgin olive oil 1/2 cup fresh squeezed lemon juice 1 teaspoon Dijon mustard 1/2 teaspoon chile pepper flakes 1/4 teaspoon sea salt In a large bowl, mix the rice, vegetables and herbs. In a small bowl, mix the vinaigrette ingredients. Drizzle the rice, vegetables and herbs with the dressing and mix well. Serve chilled or at room temperature.

Re: I need a Fabulous Pasta Salad Recipe (no mayo)
mine is really easy!
I use Barilla tri color fusilli
after it's cooked I pour olive oil, pepper, parsley and oodles of Locatelli romano cheese.
everything I use is to taste, so I have no measurements. but it's really good!

Re: I need a Fabulous Pasta Salad Recipe (no mayo)
I make this thing called "No cook pasta" but you still have to cook the pasta....weird, I know (I do this all to eye, so you be the judge of how much you should use of each ingredient)
Box of Penne 10 Plum Tomatoes Fresh Basil Garlic Powder EVOO Parmesan Cheese
What to do:
Cut tomatoes in small pieces Cut up about 5 good sized leaves of the Basil
Place those ingrediants in seperate bowl with EVOO & Garlic Powder....let sit for about an hour (don't drown the tomatoes in evoo b/c this will be going into the pasta)
Cook Pasta
Once done cooking......Pour pasta into your serving bowl...then pour tomato, garlic & EVOO mixture on top....and lastly sprinkle the parm. cheese on top, do this while still hot so cheese melts....
(I sprinkle a little salt too but you don't have too)
Serve cold or hot
YUMMMMMMMMMMMMMMMM!!!!!!!!!

Re: I need a Fabulous Pasta Salad Recipe (no mayo)
It's not a pasta salad per-se, but it's a tasty pasta dish that's great at any temp.
BLT Pasta 1 lb pasta (penne, fusili, etc.) 1 package tempeh fakin' bacon 1 pint cherry tomatoes 1 package of arugula (salad in a bag style) olive oil salt & pepper
cook the pasta up in a pot, drain, rinse with cold water, transfer to a bowl.
Fry up tempeh bacon in a moderate amount of oil until it browns up, transfer to paper towel to drain.
In the same frying pan (with a tiny bit of oil in it) wilt the arugula. Put arugula on pasta.
Cook up tomatoes in a small amount of oil in the pan for about a minute or two, add to pasta and arugula.
Cut or crumble tempeh bacon into small pieces, add to pasta mixture
Add salt & pepper to taste and mix well.
Serve hot, at room temperature or cold.

You don't want to use fresh garlic for this....it's much better with the powder b/c it sticks and mixes well with the EVOO and tomatoes!

Re: I need a Fabulous Pasta Salad Recipe (no mayo)
Not really a recipe, but I take rotini and cut in smoked mozzarella cubes and strips of salami and/or proscuitto. Then I add olive oil, salt and pepper. Refrigerator overnight, it always tastes better the second day. It's a big hit in my house.

Re: I need a Fabulous Pasta Salad Recipe (no mayo)
I do the same as someone above. Cook tortellini or regular pasta. Mix in your veggies of choice and then toss in your favourite Italian dressing. I usually let it sit overnite, it tastes better the next day.

Re: I need a Fabulous Pasta Salad Recipe (no mayo)
tortellini mixed with half of a yellow, half of a red pepper. Sliced black olives, chopped carrots, feta cheese. For a dressing I blend fresh herbs ( parsley, basil and cilantro) with olive oil, fresh squeezed lemon and cilantro paste.
