I wanted to share 2 very "kid" friendly recipes I made over the weekend.
I have been in a major cooking funk when it comes to feeding DD(who is 2), so I decided to look for some new recipes that I can give her. She's a somewhat picky eater- and eats like a bird, so I wanted what I made to have the most bang for the buck so to speak.
I made these 2 over the weekend, and not only did my DD gobble them, she even said to me "Mommy, this is REALLY good!" (which warmed my heart). DH liked them both as well, so that was a plus!
Here they are:
Garden Ranch Pizza Ingredients 1 pizza crust (pre-made from grocery store) 1/2 cup mayonnaise 2 tablespoons ranch dressing mix 2 garlic cloves, pressed 2 cups mozzarella cheese, grated 2 cups broccoli, finely chopped 1/2 cup red pepper, diced 1 medium carrot, sliced 1/2 cup olive, sliced 1/4 cup parmesan cheese, grated
Directions 1- Preheat oven to 425°F.
2- Combine mayonnaise, ranch seasoning and garlic to make a "sauce".
3- Spread evenly over crust. Sprinkle on half the mozzarella. Layer on all the vegetables and olives. Top with the remaining mozzarella and the parmesan cheese.
4-Bake 18-22 minutes or until pizza crust is cooked. Serve immediately.
Taco Soup Ingredients 1 (16 ounce) can pinto beans 1 (16 ounce) can white beans or kidney beans 1 (11 ounce) can niblet corn 1 (11 ounce) can Rotel tomatoes & chilies 1 (28 ounce) can diced tomatoes 1 (4 ounce) can diced green chilies 1 (1 1/4 ounce) envelope taco seasoning mix 1 (1 ounce) envelope hidden valley ranch dressing mix 1 lb shredded chicken, ground beef or any meat (I used ground turkey)
Directions 1- Cook meat and drain. 2-Add all ingredients to crock pot. DO NOT DRAIN CANS. 5- Stir. 6- Cook on high for 2 hours or low for 4 hours. These are the crockpot directions, but you could easily just make in on the regular stove top- and cook for like 20-25 mins instead. 7-Keep on low until serving to keep hot. 8-Garnish with sour cream, shredded cheese, chopped green onions, or tortilla chips. (I garnished with cheddar cheese only for DD, and for DH and I, we had it with a side of tortilla chips).
