Ideas for a light-ish lunch?
DH annoyingly invited his mother over to ours for lunch next Sunday before we all have to head off to our nephew's 1st birthday party. I know there will be food at the party, but entirely substantial. Any ideas of what to serve MIL for a light-ish lunch beforehand?
Oh, and it can't be quiche - apparently she's been asked to bring mini-quiches to the party.

How about some kind of salad? Grilled chicken, or maybe a pasta salad.
Or you can do finger sandwiches. My SIL did that the day of my wedding for everyone. They were great!

What about some light appetizers:
cheese and crackers
veggie platter with dip
fruit
bruschetta (sp?) with crackers
hummus with pita chips
cold antipasta platter (olives, cheeses, salami, pepperoni ect......)
fresh mozzarella salad (on top of tomatoes and a little olive oil and vinegar drizzled on top)

cheese and crackers, maybe some chips and dip, or you can do cold cuts for a sandwich.
