Ideas for Leftover Ham?

We baked a 2.65 lb ham for dinner last night and barely ate half of it. I don't want to throw it out since I paid $15 for it Any ideas of what I can do with it?

I love making split pea soup with the hock and leftover meat. If you don't have the hock, then I would say grilled ham & cheese sandwiches with brioche bread.

You can freeze the bone and use it for pea soup later on

I just posted a ham and swiss w/pasta casserole... A few threads down.

I also make a ham, egg and noodles skillet dish. I LOVE it.

Boil water for the egg noodles. While the water is boiling warm some cubed ham in a deep skillet with some butter. Once water is boiled, throw the egg noodles in and turn up the heat on the skillet. Whisk a few eggs in a bowl. Once it's piping hot throw the eggs in with the ham to scramble them. Then throw in the cooked egg noodles. Mix it up - throw some S & P to taste.

we had a ham as part of our christmas dinner. we had quite a bit left over. on monday I made omeletes with chopped up left over ham and leftover au gratin potatoes....soo good ! pea soup is also an option

My grandpa use to always make Ham salad with the leftovers...it was so good the next day on fresh bread!
