If you bake and than freeze cookies, are they soft when you defrost them?

If you bake and than freeze cookies, are they soft when you defrost them?
I have to make a bunch of cookies for DS's 1st B-day at the end of the March. I wanted to start baking a couple of weeks before the party b/c I I need to make alot. Is it better to make them and freeze them or to keep them in an air tight container (w/a piece of bread...I heard this works)?

I don't know the answer but the other day, my cookies came out hard and i microwaved them to soften them. Just an idea if you need one.
